What is that White Stuff?

Chinking. Used to be red or gray clay around here back in the day, probably some sort of synthetic stuff now. Never dealt with it. An old guy I know said they were so poor when he was a kid that they "ate the chinkin' tween the logs so as not to starve to death".

I was up in Maine a few years ago after wood season to help a friend start building a home. A neighbor's log home still had dried moss for chinking on the original structure.
